Senior Sous Chef - Cruise Whitsundays

About the role

Journey Beyond is looking for a Senior Sous Chef of production for its Cruise Whitsundays operation, which runs 10 air-conditioned vessels, a sailing catamaran and the underwater accommodation Reefsuites in the Whitsundays. The role leads the day-to-day operation of the production kitchen, ensuring efficient planning, preparation and delivery of high-quality catering for Cruise Café & Bar, onboard vessels, Reefworld, private charters and special events.

Key responsibilities

• Lead the day-to-day operations of the production kitchen
• Develop and manage daily production plans, workflow schedules and staff allocation
• Oversee all food production activities
• Manage inventory, ordering, stock rotation, stocktakes and equipment
• Lead, coach and supervise the production kitchen team
• Maintain food safety, hygiene and workplace safety standards in line with Food Safety Standards and WHS requirements
• Lead daily production meetings and resolve operational issues proactively

Required profile

• Minimum 3 years in a similar position, preferably with bulk food preparation experience
• Demonstrated experience managing staff and building a positive, high-performing team
• Ability to handle competing priorities in a fast-paced, high-volume kitchen and work extended hours during peak periods
• Strong attention to detail across food preparation, presentation, hygiene and compliance
• National Police Clearance (mandatory)

Required skills

• Cert III in Commercial Cookery (mandatory)
• HLTAID011 - Provide First Aid & Cardiopulmonary Resuscitation (mandatory)
• Proficiency in Microsoft Suite
• Food Safety Supervisor Level 1 and 2 (desirable)
