Chef De Partie - Sydney First Class Lounge

About the role

The Sydney First Class Lounge, managed by Accor, is a luxury airport lounge for Qantas first class passengers and top-tier frequent flyers, offering fine dining with an à la carte menu curated by chef Neil Perry. Accor is looking for a full-time Chef De Partie to join the Sydney International Lounges team immediately, with opportunities in both à la carte and buffet environments.

Key responsibilities

• Support the Executive Chef in food preparation, ordering and team development to exacting lounge standards.
• Ensure strict stock rotation and minimum wastage, with stock control procedures implemented and maintained.
• Work with and coordinate apprentices in preparing and producing food as required.
• Take responsibility for your designated area and anticipate guests' needs.
• Prepare and present all menu items for buffet, à la carte and tray service to lounge standards and within budget controls.
• Ensure food safety standards are met at every stage of the food cycle: delivery, storage, preparation, cookery, service and rotation.

Required profile

• Previous experience in a similar role or environment and relevant trade qualifications.
• Confident and outgoing personality.
• Appropriate knowledge of food safety standards.
• Exceptional personal presentation standards.
• Understanding of wine and food, with solid experience in a previous workplace.
• Must have full working rights in Australia.
