Sous Chef - Guildford Hotel

About the role

Australian Venue is looking for a hands-on Sous Chef to join the team at The Guildford Hotel. The role suits someone who has worked in a larger-scale, high-volume venue and understands how to keep a busy kitchen running smoothly. It is more than cooking: you will support the Head Chef, lead the team through busy services and take ownership of the day-to-day running of the kitchen.

Key responsibilities

• Support the Head Chef with the daily operation and management of the kitchen
• Lead, coach and develop the kitchen team to build a positive, accountable culture
• Keep service running smoothly during busy periods while maintaining food quality and consistency
• Manage food costs, labour, stock control, ordering and waste
• Maintain food safety, hygiene standards and kitchen procedures
• Assist with menu execution, preparation planning and consistent standards across the team
• Help manage rosters, delegate tasks and keep the kitchen organised and ready for service
• Take ownership of the kitchen when the Head Chef is away

Required profile

• Previous experience as a Sous Chef, Kitchen Manager or in a similar senior kitchen role
• Experience in a larger-scale, high-volume venue, ideally a busy pub, hotel or multi-outlet operation
• Ability to lead a team, manage competing priorities and keep standards high under pressure
• Organised, commercially minded and confident in decision-making
• A hands-on leader who leads by example and is happy to get their hands dirty
