Chef de Partie – Fine Dining

About the role

As a Chef de Partie at Pan Pacific Melbourne, you will join a dynamic kitchen team delivering high‑quality à la carte dishes for dinner service in Dock 37 Restaurant and Bar. You will work closely with the Sous Chefs and Executive Chef to maintain culinary standards and guest satisfaction.

Key responsibilities

• Prepare and present à la carte dishes in your designated section, ensuring consistency and excellence.
• Maintain a clean, organised, and well‑stocked station while managing portion control and stock rotation.
• Collaborate with the kitchen team to ensure timely and accurate order delivery.
• Adhere to all health, safety, and hygiene regulations at all times.

Required profile

• Previous experience in a 5‑star hotel or high‑end dining environment.
• Relevant qualifications such as Certificate III in Cookery, HACCP and local Food Safety Handling & Hygiene certificates.
• Ability to work a rotating roster including weekends, public holidays, early mornings and evenings.

Required skills

• Strong knowledge of contemporary kitchen practices and techniques.
• Excellent attention to detail, creativity and presentation skills.
• Proficiency in food safety standards (HACCP, local hygiene regulations).
