Director of Food & Beverage, Australasia

About the role

Minor Hotels Australasia is seeking an experienced, commercially‑minded Director of Food & Beverage to lead the F&B strategy for a portfolio of 69 hotels across Australia and New Zealand from its Brisbane corporate head office.

Key responsibilities

• Drive revenue growth, profitability, labour productivity and cost optimisation across all F&B outlets.
• Partner with operational leaders to improve outlet performance, guest experience and implement enterprise‑wide standards.
• Lead new openings, refurbishments, concept launches and operational transformations.
• Build capability, succession and leadership within F&B teams and develop strategic supplier partnerships.

Required profile

• Extensive senior F&B leadership experience in a large, multi‑site hospitality portfolio.
• Proven track record of improving revenue, profitability and cost performance.
• Strong operational expertise across restaurants, bars, conferencing and events.
• Experience establishing enterprise‑wide standards, driving transformation and managing openings or turnarounds.
• Commercial and financial acumen with a data‑led approach to performance.
• Ability to influence senior stakeholders and willingness to travel regularly across AU and NZ.
