Chef - Modern Australian Cuisine

About the role

The Chef is a full-time, on-site position at Five-star Amora Hotel Jamison Sydney, supporting the culinary operations of The Croft Restaurant and, as needed, the hotel's banqueting and bar offerings. The role plans and prepares high-quality dishes aligned with a modern Australian concept, ensuring consistency in presentation and taste, and maintains portion and quality control.

Key responsibilities

• Supervise kitchen staff and coordinate food preparation and service
• Manage stock levels and ordering
• Adhere to food safety and hygiene standards
• Collaborate with the wider hotel team to support events and functions
• Contribute to menu development and seasonal specials
• Maintain a safe, efficient and organised kitchen environment

Required profile

• Professional culinary training or equivalent experience in hotel, restaurant or high-volume kitchen environments
• Previous experience in a hotel or banqueting setting; familiarity with bar or tapas menus is highly regarded
• Ability to work in a fast-paced environment, manage multiple tickets and functions, and stay attentive to detail
• Flexible availability, including weekends, evenings and public holidays as required by hotel operations

Required skills

• Menu planning, food preparation and plating, with an understanding of modern Australian cuisine
• Knowledge of food safety regulations, HACCP principles and kitchen hygiene and workplace safety
• Stock control, cost awareness and minimising waste while maintaining quality
• Experience supervising or mentoring kitchen staff and working well in a diverse team
• Strong communication and interpersonal skills, with a guest-focused approach
