Sous Chef - JW Marriott Surfers Paradise

About the role

JW Marriott is looking for an experienced Sous Chef to lead its culinary team in Surfers Paradise. The role is accountable for the success of daily kitchen operations, supervising the kitchen and team to deliver a consistent, high-quality product while improving guest and employee satisfaction and maintaining the operating budget.

Key responsibilities

• Manage kitchen shift operations and ensure compliance with Food & Beverage policies, standards and procedures
• Estimate daily production needs weekly and communicate them to kitchen staff daily
• Assist the Executive Chef with kitchen operations and prepare and cook food for regular service and special guests
• Develop and present food displays and maintain purchasing, receiving and storage standards
• Ensure food handling and sanitation standards and compliance with applicable laws are met
• Supervise cooks and workers, lead shifts and maintain productivity and clear expectations
• Train staff in safety procedures, coach and mentor them, and take part in performance appraisals
• Handle guest feedback and complaints and set a positive example in guest relations
• Maintain equipment, check the quality of raw and cooked food and use the Labor Management System to schedule and track time and attendance

Required profile

• At least 3 years of experience in a chef management position in a high-volume hotel environment
• Excellent presentation, professionalism, communication and leadership skills
• Ability to work under pressure and meet deadlines
