Head Chef - Spicers Peak Lodge

About the role

Spicers Peak Lodge, a luxury wilderness retreat in Queensland's high country with two Michelin keys, is looking for a Head Chef for its Spicers Retreats. You will lead the culinary side of the lodge and help deliver a bespoke experience for guests. The position is full time.

Key responsibilities

• Lead culinary operations across the lodge, including restaurant service, private dining, weddings, events and bespoke guest experiences.
• Create and execute innovative seasonal menus featuring premium local produce.
• Deliver dining experiences that exceed guest expectations and match the Spicers luxury brand.
• Inspire, mentor and develop the kitchen team, building a culture of collaboration, accountability and continuous improvement.
• Maintain the highest standards of food quality, presentation, consistency and service.
• Oversee kitchen operations, including rostering, inventory management, procurement, food safety and compliance.
• Manage labour and food costs so budget targets and commercial objectives are met without compromising quality.
• Work with the General Manager and leadership team, and build strong relationships with local suppliers and producers.

Required profile

• Proven success as a Head Chef or Executive Chef in a luxury hotel, lodge or high-end restaurant.
• A strong fine dining background and a passion for exceptional guest experiences.
• Experience developing seasonal menus that showcase local produce.
• Genuine passion for Australian ingredients, regional produce and sustainable food practices.
• Ability to develop, inspire and retain high-performing teams.
• Commercially minded, with experience managing food costs, labour budgets and inventory.
• Collaborative leadership style and willingness to be a key member of the property's executive team.
