Restaurant & Bar Manager

About the role

Royal Sydney, a private members' club in Rose Bay, is looking for a Restaurant & Bar Manager to lead the daily operations of the Restaurant, Casual Dining and Bar. The role covers team leadership, service standards and member and guest satisfaction, supporting the commercial and operational goals of the Food & Beverage department. It is full time, with a flexible roster including evenings during the week and weekends.

Key responsibilities

• Deliver exceptional member and guest experiences in line with Club standards
• Oversee daily restaurant and bar operations, manage POS updates and maintain inventory
• Identify and implement service improvements
• Lead, mentor and train the team, covering staffing, scheduling and performance, and create growth and learning opportunities
• Collaborate on event promotions and menu offerings to drive revenue
• Respond quickly and accurately to member complaints
• Assist members and guests during dinner service with wine recommendations, decanting and service
• Help develop policies, standards and procedures for the Restaurant, Casual Dining and Bar

Required profile

• Proven experience as a Restaurant Manager in a 5-star hotel or fine dining restaurant
• Experience managing and leading a team of up to 20 staff
• Culinary school diploma or degree in food service management or a related field, or equivalent training
• Current NSW RSA and working rights in Australia

Required skills

• Food and beverage pairings expertise
• Understanding of pricing, budgets and cost controls
• Wine knowledge, including fault detection and temperature control
• Administration skills and working knowledge of MS Office, POS and Respak booking software
