Head Sommelier

About the role

The Royal Sydney Golf Club, a prestigious private member club in Rose Bay, is looking for a passionate Sommelier to take ownership of its wine and beverage operations, with wine as the main focus. The Sommelier reports to the Head of Food & Beverage and works primarily in the dining room from Tuesday to Saturday, with extra shifts available for special events, functions or operational needs.

Key responsibilities

• Partner with the F&B team to create wine pairing recommendations that highlight every wine.
• Work with the Executive Chef, Head of Food & Beverage and the Restaurant and Bar Manager to support the dining experience and beverage operations.
• Take part in the Wine Sub Committee, keep the wine menu ahead of member expectations, attend meetings and take minutes as required.
• Host and present Club wine events.
• Train and mentor the team and foster a caring, values-driven culture.
• Manage stock and inventory, including ordering, wine list curation (including vintage rolls) and beverage POS.
• Own key supplier relationships.

Required profile

• Sommelier experience in a hotel or hatted restaurant environment.
• Excellent communication and relationship-building skills, with genuine personability.
• WSET Level 3 minimum (or CMS Advanced).
• Proven experience managing inventory and writing wine menus.
• A real passion for hospitality and awareness of industry trends.

Required skills

• Confidence with MS Office, restaurant management systems, POS and OpenTable.
