About the role
The Apollo Restaurant Group is expanding its portfolio and seeks a Head Chef to lead a kitchen in Sydney. This role offers ownership of daily kitchen operations while collaborating across a network of restaurants.
Key responsibilities
- Lead daily kitchen operations and service, ensuring quality and consistency.
- Coach and develop the brigade with clear expectations and regular feedback.
- Contribute to menu development focusing on flavour, seasonality and produce.
- Manage food and labour costs, rostering, ordering and stock control.
- Work closely with restaurant management and senior kitchen team.
- Maintain food safety standards and an organised, well‑run kitchen.
Required profile
- Experienced Head Chef or senior Sous Chef from high‑volume, quality‑focused restaurants.
- Strong leadership, clear communication and composure during service.
- Detail‑oriented with an understanding of commercial performance.
