Demi Chef de Partie - Pastry

About the role

Sheraton is hiring a Demi Chef de Partie - Pastry for its Sydney location. The role oversees the daily communications and operations of the pastry section in collaboration with the Head Chef, liaising with the culinary team on pastry production, set-ups and timings for daily events.

Key responsibilities

• Liaise daily with the culinary team on all aspects of pastry production, set-ups and timings for daily events.
• Act as a confident, welcoming leader who helps the team grow and reach its potential.
• Assist the Head Chef in maintaining quality, consistency and production in the area of responsibility, with attention to detail.
• Keep the section clean and running efficiently during each service period.
• Understand guest requirements and deliver excellent service.
• Ensure compliance with Work, Health and Safety, hygiene and HACCP standards.
• Help with menu design and outlet concepts.

Required profile

• Trade industry qualification or completion of a Commercial Cookery qualification.
• Working rights in Australia.
• At least 3-5 years of relevant pastry experience at commis or DCDP level.
• Preferred: cake art or designer cake experience, high-volume production, buffet, banquet and à la carte dessert service experience.
• Ability to work flexible shifts, including weekends and public holidays.
• Ability to train and mentor junior team members.

Required skills

• Knowledge of HACCP, food safety standards, allergen management and dietary requirements.
• Creative mindset with a passion for menu development and innovation.
