Demi Chef – Conference & Events

About the role

Join Sofitel Melbourne on Collins as a Demi Chef supporting the Conference & Events kitchen. You will work alongside a talented team to create lavish buffets and bespoke menus for high‑profile events in a 5‑star environment.

Key responsibilities

• Support the team in producing lavish buffets and elaborate menus for conferences and events.
• Interpret event orders and deliver dishes that meet client specifications.
• Assist in training Commis Chefs and apprentices, ensuring full knowledge of the section.
• Maintain food standards, presentation, and cooking techniques in line with Sofitel brand guidelines.
• Uphold the highest level of hygiene, health & safety, and HACCP requirements.
• Manage stock rotation, minimise waste and implement stock control procedures.
• Ensure all kitchen equipment is maintained, serviced and cleaned.

Required profile

• Full working rights for Australia.
• 1‑2 years experience as a Commis Chef in a 5‑star hotel or equivalent.
• Experience training junior staff and apprentices.
• Ability to work efficiently under pressure in a fast‑paced environment.
• Willingness to work a rotating roster including weeknights, weekends and public holidays.
• Understanding of food safety standards and HACCP.
