Commis Chef - Cruise Whitsundays

About the role

Journey Beyond is seeking a Commis Chef for its Reefworld pontoon, Cruise Whitsundays' flagship offshore experience 39 nautical miles out on the Great Barrier Reef. This entry-level culinary role is based permanently on site, under the direct guidance of the Reefworld Chefs, on a swing-based roster of 8 days on, 6 days off, with all shifts at Reefworld.

Key responsibilities

• Own daily breakfast service: prepare, cook and present all components to the required standard, delivered on time.
• Contribute to lunch service under the chefs' guidance, helping with preparation, plating and maintaining quality and pace.
• Complete dinner preparation tasks, including mise en place, portioning and kitchen setup.
• Maintain a clean, compliant kitchen station following the Food Safety Management Plan and HACCP procedures, with accurate food safety documentation.
• Assist Pontoon Hosts with coffee preparation and table service when required.

Required profile

• Genuine passion for hospitality and food, with a willingness to learn and develop.
• Ability to work in a close-knit team in an isolated offshore environment, reliably and self-motivated over an 8-day swing without shore support.
• Prior experience in a commercial kitchen.
• Barista experience.

Required skills

• Certificate III in Commercial Cookery (or enrolled), or equivalent kitchen experience.
• SITHFAB021 - QLD Responsible Service of Alcohol.
• SITSS00069 - Food Safety Supervision Skill Set.
• HLTAID011 - First Aid, CPR and oxygen.
• QLD Blue Card (Working with Children Check).
• Elements of Shipboard Safety and National Police Check.
