Apprentice Chef – Banquets

About the role

Join the culinary team at Pullman & Mercure Melbourne Albert Park and support the preparation of high‑quality banquet dishes. You will develop practical cookery skills under experienced chefs while working in a vibrant hotel environment.

Key responsibilities

• Assist with preparing and cooking food according to recipes, menu specifications and food‑safety standards.
• Prepare ingredients – washing, peeling, chopping and portioning – to ensure consistency and quality.
• Maintain a clean, organised and hygienic kitchen, complying with HACCP and workplace health and safety requirements.
• Support stock receiving, storage and rotation to minimise waste and keep products fresh.
• Help the kitchen team during service to ensure efficient and high‑standard food presentation.

Required profile

• Genuine passion for food and a desire to build a hospitality career.
• Enrolled in or willing to undertake a Certificate III in Commercial Cookery (or equivalent apprenticeship).
• Strong work ethic, positive attitude and willingness to learn.
• Australian working rights – sponsorship is not available.

Required skills

• Food safety knowledge (HACCP).
• Safe operation of kitchen equipment.
• Basic commercial cookery techniques.
