Head Chef - Cruise Whitsundays

About the role

Cruise Whitsundays, based in Airlie Beach, is the largest marine-based tour and transport provider in the Whitsundays, operating 10 air-conditioned vessels, a sailing catamaran, tours, an inter-island resort connection service and the underwater accommodation Reefsuites. As Head Chef, reporting to the Catering Operations Manager, you will lead the day-to-day operations of the production kitchen and ensure efficient planning, preparation and delivery of high-quality catering for Cruise Café & Bar, onboard vessels, Reefworld, private charters and special events.

Key responsibilities

• Lead daily production meetings and resolve operational issues
• Identify opportunities to improve kitchen efficiency, workflow, quality and service delivery
• Support menu implementation and operational planning with the Catering Operations Manager and Reefworld Chefs
• Provide culinary leadership and cover Reefworld during peak demand or staffing shortages
• Supervise a kitchen team and oversee food handling procedures and food safety compliance

Required profile

• Minimum 3 years in a similar position, preferably with bulk food preparation experience
• Track record of meeting labour productivity and production efficiency targets
• Proven ability to lead and develop a production team and keep staff up to date with their qualifications
• Commitment to safe, efficient catering and strong food quality, consistency and presentation

Required skills

• Cert III in Commercial Cookery (mandatory)
• HLTAID011 First Aid and CPR (mandatory)
• National Police Clearance (mandatory)
• Food Safety Supervisor certification desirable (Level 1 or 2)
• Knowledge of food safety standards and WHS requirements
• Accurate inventory and stock control
