Food & Beverage Duty Manager

About the role

The Food & Beverage Duty Manager at Cleo, located within Hyde Melbourne Place, will oversee daily restaurant and bar operations, lead service periods and support the team to deliver consistent, high‑quality guest experiences.

Key responsibilities

• Lead and manage day‑to‑day restaurant and bar operations during shifts.
• Ensure exceptional guest service and handle feedback professionally.
• Supervise, train and motivate front‑of‑house team members.
• Maintain service, presentation and brand standards at all times.
• Ensure compliance with OH&S, food safety and responsible service of alcohol requirements.
• Support stock control, cash handling and daily reporting.
• Collaborate with kitchen and hotel teams and assist with hotel conferences and events as needed.

Required profile

• Previous experience as a Food & Beverage Supervisor or Duty Manager.
• Strong leadership with a hands‑on approach to service.
• Passion for hospitality and delivering memorable guest experiences.
• Excellent communication and interpersonal skills.
• Ability to stay calm and organised in a fast‑paced environment.
• Availability to work a rotating roster including evenings, weekends and public holidays.
• Victorian RSA & Food Safety Certificate.
