Food and Beverage Manager

About the role

Novotel Melbourne South Wharf, part of Accor, is looking for an experienced Food and Beverage Manager to lead its front-of-house food and beverage operations. The role works closely with the Executive Chef and the leadership team to evolve the restaurant and bar concepts, improve service delivery and build an engaged team culture. It suits someone who balances strategic thinking with hands-on operational leadership.

Key responsibilities

• Lead the day-to-day operation of the restaurant, bar, café and in-room dining services
• Ensure exceptional guest experiences and service standards that exceed expectations
• Support new food and beverage concepts, promotions and service initiatives
• Build a positive, inclusive team culture through coaching, mentoring, training and regular feedback
• Recruit, develop and retain hospitality staff
• Work with the kitchen team to deliver seamless dining experiences
• Manage labour costs, rosters and productivity to meet commercial objectives
• Grow revenue, improve efficiency and act on guest feedback
• Maintain compliance with hotel policies, WHS requirements and sustainability commitments
• Use HumanForce, Micros and Purchase Plus

Required profile

• Demonstrated experience leading a food and beverage operation in a hotel, restaurant group or similar high-volume environment
• Previous Food and Beverage Manager or equivalent leadership role
• Natural people leader able to lead through change
• Commercially minded, with experience managing labour, costs, budgets and performance
• Current Responsible Service of Alcohol (RSA) qualification and full working rights in Australia
• Willingness to work a rotating roster including mornings, evenings and weekends
