Demi Chef - Luxury Hotel Kitchen

About the role

Sofitel Sydney Darling Harbour, a luxury hotel on Sydney's waterfront with 590 rooms and suites, four bars and restaurants and a spa, is looking for a Demi Chef to join its Culinary team. The role offers the chance to build experience across several outlets, including Atelier, Club Millésime, Le Rivage, Breakfast, In-Room Dining, Esprit Noir and the Champagne Bar, working alongside experienced chefs.

Key responsibilities

• Prepare, cook and present dishes according to recipes, menus and Sofitel standards.
• Work across the listed kitchen sections and outlets, supporting daily preparation, mise en place and service.
• Maintain consistency, quality and presentation of every dish, following portion controls and plating standards.
• Assist with service across breakfast, lunch, dinner, events and other operational needs as rostered.
• Collaborate with Chefs, Sous Chefs and the wider Culinary team.
• Keep food safety, hygiene and HACCP standards, and keep the section organised and service-ready.
• Monitor food quality and presentation, minimise food waste, and help receive, store and rotate stock.
• Follow workplace health and safety procedures and support the training of junior team members.

Required profile

• Certificate III in Commercial Cookery or equivalent culinary qualification.
• Previous experience as a Commis Chef, Demi Chef or similar kitchen role.
• Experience in a high-end hotel, restaurant or high-volume kitchen.
• Full Australian working rights.
• Ability to work a rotating roster, including mornings, evenings, weekends and public holidays.

Required skills

• Strong understanding of food preparation, cooking techniques and kitchen operations.
• Understanding of food safety, hygiene and HACCP standards.
• Attention to detail and ability to stay calm during busy service.
• Communication and teamwork skills.
