Commis Chef - Pastry

About the role

Pullman East Melbourne, a five-star hotel near Fitzroy Gardens and the MCG, is looking for a Commis Chef - Pastry to join its pastry team. The role is full-time and starts with early morning breakfast service, then moves into cross-training across the pastry department.

Key responsibilities

• Produce and bake premium breakfast pastries to five-star brand and presentation standards.
• Set up, present and maintain the breakfast buffet at Cliveden Restaurant, and plan and run breakfast buffets for banquets and special events.
• Manage dedicated gluten-free breakfast stations in line with food safety standards.
• Prepare à la carte desserts and support daily pastry mise en place for restaurant and banquet operations.
• Assist in producing luxury cakes, desserts, pastries and bakery items, including doughs, creams and fillings.
• Help with inventory control, stock rotation and waste minimisation.

Required profile

• Certificate III in Patisserie (or equivalent) preferred.
• Previous pastry kitchen experience, ideally in a hotel or fine-dining setting.
• Flexibility for a 7-day rotating roster, including early mornings, late finishes, weekends and public holidays.

Required skills

• Classical and modern pastry techniques, including baking, shaping and tempering.
• Attention to detail and an eye for refined presentation.
