Commis Chef – Fine Dining Kitchen Team

About the role

The Commis Chef works directly under the Sous Chef to support daily kitchen operations in a fast‑paced, safety‑focused environment. This role offers hands‑on experience in delivering high‑quality dishes across multiple dining concepts at The Star Sydney.

Key responsibilities

• Assist the Sous Chef in preparing and cooking dishes for assigned sections.
• Maintain cleanliness and hygiene of kitchen equipment, workstations, and storage areas.
• Support junior staff by providing training and guidance on basic cooking techniques.
• Ensure all food preparation meets company and statutory hygiene standards.

Required profile

• Experience in fine‑dining or casual‑dining kitchen environments.
• Certificate III in Commercial Cookery (or higher qualification).
• Flexibility to work a rotating roster including mornings, evenings, weekends and public holidays.
• Strong communication skills and a proactive, positive attitude.

Required skills

• Wood‑fire cooking techniques.
• Japanese cuisine knowledge (sushi, robata, tempura).
• Competence in Asian and Western cuisine preparation.
