Sous Chef - Sovereign

About the role

The Star Sydney is looking for a passionate and dedicated Sous Chef to join its Sovereign team. Sovereign is an exclusive dining space for VIP members, with uninterrupted views of Sydney Harbour, a sunken bar and a fine dining restaurant serving Asian and Western cuisine. The role offers career progression and skill development under the mentorship of some of the best chefs in Sydney.

Key responsibilities

• Assist the Restaurant Executive Chef in managing guest service, team member performance and development, and service improvements
• Oversee both Asian and Western stations by supervising and leading by example
• Train and coach Commis and Demi Chefs, and guide staff in performing kitchen operations
• Ensure outlets comply with HACCP standards through daily monitoring and walkthroughs of the back of house
• Review the daily stocktake and make sure orders are placed and stock received

Required profile

• Solid Chef de Partie or Junior Sous Chef experience
• Relevant tertiary qualifications, such as a Certificate IV in Commercial Cookery
• Experience in a busy, fast-paced kitchen
• Ability to commit to 40 hours per week on varied shifts, including weekends and holidays

Required skills

• Strong understanding of produce, culinary techniques and kitchen equipment
• Excellent communication and interpersonal skills
