Catering Operations Manager - Cruise Whitsundays

About the role

Cruise Whitsundays, based in Airlie Beach and owned by Journey Beyond, is the largest marine-based tour and transport provider in the Whitsundays, operating 10 air-conditioned vessels, a sailing catamaran, tours, an inter-island resort connection service and the underwater accommodation Reefsuites. The Catering Operations Manager leads and shapes all aspects of the catering department, with a focus on improving food and beverage options.

Key responsibilities

• Strategic and operational leadership of the Catering Department
• Lead supplier negotiations, procurement strategies and product sourcing
• Accountability for food safety, workplace health and safety, licensing and regulatory compliance
• Develop, implement and improve Standard Operating Procedures
• Lead compliance audits, inspections and risk management activities
• Drive catering quality, lead menu strategy and monitor guest feedback

Required profile

• Minimum 3 years in a similar position, preferably with bulk food preparation experience
• Cert III in Commercial Cookery (mandatory)
• Driver licence (mandatory)
• SITHFAB021 - QLD Responsible Service of Alcohol (mandatory)
• SITSS00069 - Food Safety Supervision skill set (mandatory)
• HLTAID011 - First Aid and CPR (mandatory)
• QLD Blue Card (working with children's check) (mandatory)
• Elements of Shipboard Safety (mandatory)
• Proven rostering and workforce planning, with knowledge of the Hospitality Industry Award
• Leadership and people management experience
• Ability to work varied hours, including weekends and extended shifts
