Assistant Restaurant Manager – Luxury Dining

About the role

The Assistant Restaurant Manager will support the Restaurant Manager in delivering the iconic Nobu experience. You will lead from the floor, coach the front‑of‑house team and ensure every guest receives exceptional service.

Key responsibilities

• Lead, coach and develop front‑of‑house staff to maintain luxury service standards.
• Manage roster planning, labour optimisation and operational scheduling.
• Handle guest feedback, service recovery and VIP experiences professionally.
• Assist with financial performance, stock control and cost management.
• Ensure compliance with food safety, operational procedures and service standards.
• Act as venue leader in the Restaurant Manager’s absence and during peak periods.

Required profile

• Proven leadership experience in a premium, luxury or high‑volume dining environment.
• Strong coaching and mentoring abilities with a focus on high‑performing teams.
• Commercial acumen in labour management, productivity and venue performance.
• Current NSW RSA Competency Card.

Required skills

• Extensive knowledge of food, wine, sake and beverages.
• Experience with Japanese or Asian cuisine (highly regarded).
• Hands‑on leadership style, able to lead from the floor during peak service.
