Sous Chef - The Lodge Wadjemup

About the role

The Lodge Wadjemup, a hotel on Rottnest Island in Western Australia, is looking for a Sous Chef to join its kitchen team. Reporting to the Head Chef, you will help run the kitchen smoothly, keep food quality high and lead the team so guests enjoy great dining. The position is full-time.

Key responsibilities

• Support the Head Chef in managing daily kitchen operations
• Lead, mentor and motivate the kitchen team to maintain high performance standards
• Ensure consistency in food preparation, presentation and quality
• Assist with menu development, seasonal specials and culinary innovation
• Manage food costs, portion control, stock rotation and wastage
• Maintain compliance with food safety, hygiene and workplace health and safety standards
• Help with kitchen rostering, training and team development
• Oversee kitchen operations in the Head Chef's absence
• Work with the Food & Beverage team to deliver seamless service

Required profile

• Previous experience as a Sous Chef or strong experience as a Senior Chef de Partie ready to step up
• Relevant commercial cookery qualifications, ideally Certificate III or IV in Commercial Cookery
• Experience managing food costs, inventory and kitchen operations
• Sound knowledge of food safety standards and compliance requirements
• Ability to stay calm and organised during busy service periods
