Sous Chef – Full Time

About the role

Join the busy kitchen at The Grand Hotel in Frankston as a full‑time Sous Chef. You’ll work closely with the Head Chef to ensure smooth daily operations, high‑quality food, and a great guest experience.

Key responsibilities

• Assist the Head Chef in managing kitchen workflow and service delivery.
• Prepare and plate dishes to a high visual and taste standard.
• Lead and motivate kitchen staff, fostering a supportive culture.
• Maintain food safety, cleanliness and compliance standards.
• Manage stock, ordering and supplier relationships to minimise waste.
• Monitor food and labour costs to meet budget targets.
• Support recruitment, training and development of team members.

Required profile

• At least 3 years’ experience in a professional kitchen, with leadership or support experience.
• Certificate III in Commercial Cookery or equivalent.
• Current Food Safety and Food Allergens certification, or willingness to obtain.
• Strong understanding of food safety, hygiene and kitchen compliance.
• Excellent organisation, communication and calmness under pressure.

Required skills

• Confidence across a variety of cooking techniques.
• Ability to lead, motivate and support a kitchen team.
