Sous Chef - Broome

About the role

Kimberely Accommodation West is looking for an experienced Sous Chef to join its small team in Broome. The successful applicant will work both as part of a team and independently, with previous experience as a Sous Chef.

Key responsibilities

• Work across all kitchen sections: hot section, cold larder, function preparation, breakfast and bulk catering
• Assist the Head Chef with cost control measures
• Plan menus, estimate food and labour costs and order food supplies
• Complete regular inventory management
• Prepare food to meet special dietary requirements
• Monitor dish quality at every stage of preparation and presentation, advise on cooking procedures and regulate oven and grill temperatures
• Comply with the Food Safety Program, explain and enforce hygiene regulations and follow company and local government policies on food and kitchen operations
• Ensure portion control, minimise wastage and adhere to purchasing stock control and reporting requirements
• Adhere to the WH&S compliance regime for the food operation
• Communicate with team members, pass on knowledge and directives from the Head Chef and Sous Chef, and may train other kitchen staff and apprentices

Required profile

• At least 3 years of experience in a similar role
• Previous experience as a Sous Chef
• Excellent verbal and written communication
• Thrives in a fast-paced, challenging environment and is comfortable leading teams during busy periods
• Strong focus on customer satisfaction and prompt action
