Head Chef – South East Asian Restaurant

About the role

AccorHotel is seeking an experienced Head Chef to lead the kitchen at Mr Good Guy, the signature South‑East Asian restaurant within ibis Styles Hobart. You will shape the culinary vision, develop the team and ensure exceptional guest experiences in a high‑volume hotel environment.

Key responsibilities

• Lead the culinary vision, creating bold South‑East Asian flavours and seasonal menus.
• Oversee daily kitchen operations across restaurant service, breakfast, events and hotel activations.
• Manage food and labour costs, menu engineering, stock control and supplier relationships to achieve strong commercial outcomes.
• Maintain food safety, hygiene and WHS standards.
• Support conferences and events with tailored menus and smooth execution.
• Mentor and develop a high‑performing kitchen team, fostering a culture of accountability and continuous improvement.

Required profile

• Minimum 3 years’ experience as a Head Chef or Senior Sous Chef in a quality restaurant, hotel or high‑volume venue.
• Strong leadership and coaching abilities, with a collaborative style.
• Excellent financial acumen for managing labour, food costs and menu profitability.
• Calm, organised and solutions‑focused in a fast‑paced environment.
• Current working rights in Australia.
