Chef de Partie - Grill, Wok and Larder

About the role

Sofitel Sydney Wentworth, a five-star French luxury hotel, is looking for a part-time Chef de Partie to join the Delta Rue kitchen. The role covers a section across grill, wok and larder, working closely with the Sous Chef and Head Chef on seasonal produce and menu development.

Key responsibilities

• Run and maintain a section of the kitchen (grill, wok or larder) to Delta Rue's standards during service
• Prepare mise en place ahead of service and ensure consistency, quality and presentation across every dish
• Support cross-training across sections to build a flexible kitchen team
• Work with the Sous Chef and Head Chef on menu development, specials and seasonal produce
• Maintain strict food safety, hygiene and HACCP standards
• Manage stock rotation, order support and minimise waste on the section
• Mentor and support junior chefs and kitchen hands on shift

Required profile

• Trade qualification in Commercial Cookery (Certificate III or equivalent)
• Proven experience as a Chef de Partie or strong Demi Chef ready to step up, ideally in a hotel, luxury or high-volume environment; previous experience in a 4-5 star hotel or high-end restaurant is highly regarded
• Strong food safety and HACCP knowledge
• Availability early in the morning, including weekends and public holidays
• Team player with a positive, proactive attitude and pride in consistency
• Full working rights in Australia are required
