Breakfast Chef de Partie

About the role

Sofitel Sydney Wentworth, a five-star French luxury hotel in Sydney, is looking for an experienced Breakfast Chef de Partie to lead and support breakfast service across its outlets, including à la carte and buffet offerings. Breakfast is described as the busiest and most visible service period, and the role works closely with the Sous Chefs, Executive Chef and the wider culinary team.

Key responsibilities

• Set up, run and pack down the breakfast buffet and à la carte service to Sofitel standards
• Prepare and cook hot and cold breakfast items to a consistently high standard
• Maintain food safety, hygiene and HACCP compliance throughout service
• Manage mise en place and stock rotation for the section
• Support ordering, costing awareness and minimising wastage
• Supervise and mentor junior kitchen team members and casual staff during breakfast shifts
• Liaise with Front of House for smooth, guest-focused service
• Assist with events and in-room dining as required

Required profile

• Trade qualification in Commercial Cookery (Certificate III or equivalent)
• Proven experience as a CDP, or a strong Demi Chef ready to step up, ideally in a hotel, luxury or high-volume environment
• Sound knowledge of breakfast buffet and à la carte service
• Previous experience in a 5-star hotel or high-end restaurant highly regarded
• Availability for early morning shifts, including weekends and public holidays
• Full working rights in Australia are required
