About the role

Join Pullman at Sydney Olympic Park as the Assistant Restaurant & Bar Manager for Bacar, a premium dining venue recognised for its sophisticated service and award‑winning wine list. You will lead the floor team, drive service excellence, and enhance guest satisfaction across daily service and major events.

Key responsibilities

• Lead service operations for breakfast, lunch and peak event periods, ensuring seamless execution under pressure.
• Boost guest experience and online scores (RPS, Google, TripAdvisor) through proactive engagement and service recovery.
• Engage VIPs and Accor members with personalised, loyalty‑driven experiences.
• Increase revenue per seat via structured upselling, beverage storytelling and strategic recommendations.
• Mentor and inspire the team, fostering a high‑performance culture aligned with LQA standards and Heartist values.
• Roster, forecast and manage labour in line with hotel occupancy and event demand.
• Collaborate with the Culinary Team to maintain smooth service flow and strong product knowledge.
• Monitor financial performance, including average checks, revenue, COGS and labour percentage, and assist with monthly reporting.
• Champion compliance with hygiene, RSA, stock control and equipment care standards.

Required profile

• Minimum 2 years leadership experience in a hotel restaurant or similar environment.
• Current RSA certification.
• Confident hands‑on leader with strong communication skills, able to maintain professionalism under pressure.
• Highly organised with strong attention to detail and commitment to consistency.
• Comfortable with prolonged standing, walking, carrying, lifting, pushing and pulling.
• Flexible to work varied shifts including early mornings, late nights, weekends, public holidays and major event days.
• Full working rights in Australia.

Required skills

• RSA (Responsible Service of Alcohol) certification.
• Proficient with POS systems, roster creation, wage control and reporting.
• Strong understanding of food safety and hygiene standards.
