Venue Manager / F&B Manager - Boutique Hotel

About the role

A premium lifestyle hotel in Sydney is creating a new dining destination with a waterfront location, featuring café culture, poolside dining, curated cocktails and leisurely lunches. It is looking for a hands-on, creative and commercially minded Venue Manager / F&B Manager to take ownership of the boutique food and beverage operation, working closely with the Head Chef and hotel leadership to attract both hotel guests and locals. The role suits someone who wants more ownership and creative freedom than simply running a service.

Key responsibilities

• Develop and implement SOPs, service sequences and operational standards.
• Help shape cocktail lists, beverage offerings and guest experiences.
• Build a confident, engaged front-of-house team.
• Elevate the poolside dining, restaurant and events experience.
• Partner with the Head Chef on offerings, menus and service delivery.
• Own rostering, labour, stock control and F&B financial performance.
• Drive local engagement and establish the venue as a destination in its own right.

Required profile

• Strong restaurant or food and beverage leadership experience.
• Experience managing a premium café, waterfront restaurant, boutique hotel outlet or lifestyle venue.
• Passion for food, cocktails, service and the finer details.
• Commercial understanding and a proactive approach to driving revenue.
• Hands-on leadership style and genuine presence on the floor.
• Hotel experience is not essential; hospitality instincts are.
