Sous Chef – Lead Kitchen Operations

About the role

Join the newly transformed Mercure Brisbane Spring Hill as a Sous Chef, supporting the Executive Chef in delivering exceptional food across the signature Parklands Social restaurant, hotel operations, and events.

Key responsibilities

• Assist the Executive Chef in daily kitchen operations and ensure smooth service delivery.
• Lead, motivate and develop the kitchen team, maintaining high standards of food quality, presentation and hygiene.
• Manage mise en place, stock, ordering and food cost control while minimizing waste.
• Contribute to menu development, specials and new ideas as the restaurant evolves.
• Step in to run the kitchen in the Executive Chef’s absence.

Required profile

• Previous experience as a Sous Chef or senior chef role.
• Strong technical culinary skills and passion for food.
• Ability to lead and develop a kitchen team in a fast‑paced environment.
• Excellent understanding of food safety, hygiene and WHS standards.
• Organised, calm under pressure and proactive in problem‑solving.
