Sous Chef – Asian Fusion Restaurant

About the role

The iconic Lilianfels Blue Mountains Resort is seeking a Sous Chef to lead the kitchen team at Miss Lilian, its vibrant Asian fusion restaurant. You will oversee daily operations, ensure high‑quality dishes, and contribute to the venue’s overall success.

Key responsibilities

• Oversee day‑to‑day kitchen operations, delivering a profitable Asian fusion dining experience.
• Collaborate with the Executive Chef to develop and evolve innovative menus.
• Lead, mentor and train the kitchen brigade, maintaining strong culinary standards.
• Work closely with front‑of‑house to ensure seamless service and elevated guest experiences.
• Maintain clear communication, food safety, hygiene and WHS compliance.

Required profile

• Trade‑qualified Chef (essential).
• Minimum 2+ years experience as a Junior Sous Chef or Senior CDP.
• Strong exposure to Asian or Asian‑fusion cuisine.
• Understanding of back‑of‑house operations: ordering, stock control, rostering, menu planning, cost management.
• Willingness to work a rotating roster including weekends and public holidays.
