Head Pizza Chef

About the role

Gage Roads Freo is a high‑volume, 1,500‑seat brewpub on the Fremantle waterfront. As Head Pizza Chef you will own the pizza operation, from dough preparation to final service, ensuring consistency and speed in a fast‑paced environment.

Key responsibilities

• Set and maintain dough and product standards, manage fermentation and scaling.
• Operate and maintain the wood‑fired oven, ensuring optimal performance.
• Oversee stock, ordering, waste control and food‑cost management for the pizza section.
• Recruit, train, lead and develop the pizza team while upholding hygiene and safety standards.
• Collaborate with the Head Chef on menu development, costing and cross‑team culture.

Required profile

• Proven experience leading a pizza section or kitchen in a high‑volume venue.
• Strong ability to work calmly under pressure with a team‑first attitude.
• Leadership skills to train, develop and maintain standards during busy service.

Required skills

• Expert hand‑stretching and dough management, including fermentation.
• Mastery of wood‑fired oven operation.
• Knowledge of food safety, hygiene and record‑keeping.
• Experience with stock control, ordering and food‑cost management.
