Head Chef – South East Asian Restaurant

About the role

We are seeking an experienced, people‑focused Head Chef to lead the kitchen at Mr Good Guy, the signature South‑East Asian restaurant within ibis Styles Hobart. You will shape the culinary vision, design seasonal menus and ensure an exceptional dining experience for every guest.

Key responsibilities

• Lead the culinary direction, creating bold South‑East Asian flavours and seasonal menus that balance creativity, quality and commercial performance.
• Oversee daily kitchen operations across restaurant service, breakfast, events and hotel activations, maintaining consistency, food quality and presentation standards.
• Manage food and labour costs, menu engineering, stock control and supplier relationships to achieve strong commercial outcomes.
• Support conferences and events with tailored menus and smooth execution.
• Mentor, coach and develop a high‑performing kitchen team, fostering a culture of accountability and continuous improvement.

Required profile

• Minimum 3 years experience as a Head Chef or Senior Sous Chef in a quality restaurant, hotel or high‑volume venue.
• Strong leadership, financial acumen and ability to remain calm and solutions‑focused in a fast‑paced environment.
• Current working rights in Australia and flexible to work mornings, evenings and weekends.

Required skills

• Experience managing kitchen operations, rostering, food costing and supplier relationships.
• Sound financial skills for labour and food cost control and menu profitability.
