Head Chef – Joseph's Restaurant

About the role

Lead the kitchen at Joseph's Restaurant, the signature dining room of Lancemore Mansion Hotel, delivering high‑quality, produce‑driven cuisine in a heritage setting.

Key responsibilities

• Lead daily kitchen operations and service at Joseph's Restaurant.
• Collaborate with the Executive Chef to design seasonal menus.
• Train, develop and retain the kitchen brigade.
• Manage ordering, supplier relationships, stock control and food cost targets.
• Control labour costs through rostering and wage management.
• Ensure compliance with food safety, allergen and WHS requirements.
• Represent the kitchen in operational meetings and step in for the Executive Chef when needed.

Required profile

• Certificate III or IV in Commercial Cookery or equivalent.
• Proven experience as a Head Chef or senior Sous Chef in a quality à la carte restaurant or hotel dining room.
• Strong leadership with a track record of developing kitchen teams.
• Experience in ordering, stock control and food cost management.
• Passion for seasonal produce and strong creative and technical foundation.
• Current Australian working rights.

Required skills

• Certificate III or IV in Commercial Cookery.
• Food Safety Supervisor certification (or willingness to obtain).
