Food & Beverage Assistant Manager

About the role

Hotel Chadstone Melbourne MGallery, a five-star luxury MGallery property near the city of Melbourne and Chadstone, is looking for a Food & Beverage Assistant Manager. This is a hands-on operational leadership role overseeing the day-to-day running of all F&B outlets, including Pastore (the signature Italian restaurant), Altus Rooftop Bar & Lounge, Conference & Events and In-Room Dining. The role is visible and approachable, balancing operational priorities with a focus on guest experience and team support.

Key responsibilities

• Oversee daily operation of all F&B outlets so that service is seamless, consistent and aligned with luxury standards.
• Provide visible, hands-on leadership across restaurant, bar, Conference & Events and In-Room Dining operations.
• Lead and support Supervisors and operational team members, setting clear expectations and building a culture of accountability, teamwork and service excellence.
• Coach and develop team members to strengthen capability, confidence and future leadership potential.
• Ensure personalised, attentive and memorable guest experiences at every touchpoint.
• Manage guest feedback and service recovery professionally, with a focus on positive outcomes.
• Work closely with the Executive Chef, Restaurant & Bar Manager, Meetings & Events team and other hotel departments for coordinated operations.
• Support recruitment, onboarding, training, rostering and labour management.
• Monitor service standards, outlet presentation, cleanliness and operational procedures, and address issues promptly.
• Take ownership of operational challenges, identify improvements to service delivery, team performance and efficiency, and maintain a strong presence during evenings, weekends and public holidays.

Required profile

• Previous supervisory or management experience in Food & Beverage, ideally in a hotel or premium hospitality environment.
• A genuine passion for luxury hospitality and creating exceptional guest experiences.
• Strong people leadership skills, able to motivate, coach and support teams in a fast-paced environment.
• Confidence overseeing multiple outlets and managing competing operational priorities.
• Hands-on leadership style, willing to step in and support the team wherever needed.
• Excellent communication and interpersonal skills, and strong problem-solving skills.
• Sound understanding of service standards, food safety, workplace health and safety and operational procedures.
• Good organisational skills and understanding of rostering and labour management.
• Flexibility to work across a rotating roster, including evenings, weekends and public holidays.
