Food and Beverage Manager

About the role

Novotel Melbourne South Wharf, a 26-level hotel with 347 rooms, Mr. Carpano Dining + Bar and Allora Café, is looking for an experienced Food and Beverage Manager. The role oversees all front-of-house food and beverage operations, works closely with the Executive Chef and leadership team, and helps shape the future of the restaurant and bar concepts.

Key responsibilities

• Lead the day-to-day operation of the restaurant, bar, café and in-room dining services
• Ensure service standards consistently exceed guest expectations
• Support new food and beverage concepts, promotions and service initiatives
• Build a positive, inclusive team culture through coaching, mentoring, training and feedback
• Recruit, develop and retain hospitality staff
• Work with the kitchen team to deliver seamless dining experiences
• Manage labour costs, rosters and productivity to meet commercial objectives
• Grow revenue, improve efficiency and act on guest feedback
• Maintain compliance with hotel policies, WHS requirements and sustainability commitments
• Use HumanForce, Micros and Purchase Plus

Required profile

• Demonstrated experience leading a food and beverage operation in a hotel, restaurant group or similar high-volume environment
• Previous Food and Beverage Manager or equivalent leadership role
• Natural people leader able to lead through change
• Commercially minded, with experience managing labour, costs, budgets and performance
• Experience coaching emerging leaders and flexibility for a rotating roster including mornings, evenings and weekends
• Current Responsible Service of Alcohol (RSA) qualification and full working rights in Australia
