Director of Food & Beverage

About the role

Minor International is launching NH Collection Sydney and seeks an experienced Director of Food & Beverage to lead the pre‑opening and ongoing performance of its Spanish fine‑dining restaurant and SEEN Rooftop Bar. This senior leader will shape service standards, build the F&B team and ensure a world‑class guest experience.

Key responsibilities

• Lead performance, profitability and strategic direction of both venues.
• Develop and implement revenue‑driving strategies.
• Build, mentor and inspire a high‑performing F&B leadership team.
• Partner with the Executive Chef to deliver an elevated dining experience.
• Prepare, evaluate and report on budgets, forecasts and financial results.
• Implement operational systems, service standards and training programs.
• Ensure compliance with health, safety and company policies.
• Foster strong relationships with suppliers and key stakeholders.

Required profile

• Extensive senior F&B leadership experience in luxury hotels or premium standalone venues.
• Significant experience managing fine‑dining restaurants and high‑end bar operations.
• Proven success leading teams in sophisticated, service‑driven environments.
• Strong commercial acumen with experience managing budgets and profitability.
• Excellent leadership, communication and stakeholder management skills.
• Tertiary qualification in Hospitality Management or Business (preferred).
