Commis Chef

About the role

Pullman & Mercure Melbourne Albert Park, a dual-branded hotel of the Accor group opposite Albert Park Lake, is looking for a passionate, creative and growth-driven Commis Chef. Reporting to the Executive Chef, the role supports the kitchen across breakfast, lunch, dinner, room service, banqueting and buffet service. The position is full-time and requires Australian working rights, as sponsorship is not provided.

Key responsibilities

• Assist with food preparation and production for breakfast, lunch, dinner, room service, banqueting and buffet service.
• Maintain clean, hygienic and organised work environments and uphold HACCP standards.
• Perform tasks promptly to ensure high guest satisfaction.
• Maintain and collaborate on stock rotation and stock control to reduce waste and keep hygiene standards.
• Create consistent, high-quality food production and liaise with kitchen teams on special requests or delayed meals.

Required profile

• Can-do attitude and ability to work effectively within a team.
• Previous experience in a fast-paced kitchen or banqueting environment.
• Understanding of workplace health and safety principles.
• Food Safety Certificate is essential.
• Flexibility to work a rotating roster, including morning, afternoon, evening and weekend shifts.

• Excellent technical knowledge with experience in a variety of cooking techniques and styles.
