Chef De Partie - Langlands Restaurant & Bar

About the role

Hyatt Centric Melbourne, based in the Melbourne CBD, is looking for a Chef De Partie for its Langlands Restaurant & Bar, a grill and dining room on level 25. The role is part of the Culinary team and supports the Executive Sous Chef in keeping the hotel's kitchens running smoothly and efficiently.

Key responsibilities

• Lead and mentor junior team members
• Maintain section readiness and organisation so that service runs efficiently and the kitchen stays clean
• Foster a positive team culture between back of house and front of house
• Help run shifts and make sure basic kitchen standards are met when the Sous Chefs and Executive Sous Chef are away
• Comply with hotel policies and food safety standards
• Monitor and maintain the quality and quantity of dishes served

Required profile

• 2+ years' experience in a fast-paced high-end restaurant or hotel
• Strong knowledge and hands-on experience in Modern Australian and Classic European cuisine
• HACCP and local food safety handling and hygiene knowledge
• Ability to lead by example, train and mentor junior chefs and manage all kitchen sections
• Flexible to work a rotating roster, including weekends and public holidays

Required skills

• Certificate IV Commercial Cookery or higher
• Well-developed computer skills, especially MS Office, for kitchen administration
