Chef de Partie - Banquets

About the role

Pullman & Mercure Melbourne Albert Park, part of the Accor group, is looking for a full-time Chef de Partie for its banquets. The hotel sits opposite Albert Park Lake, offers 378 rooms, a restaurant and bar, and hosts one of Melbourne's largest conference centres with 32 event spaces. The Chef de Partie prepares high-quality dishes for banquets and supports the kitchen team.

Key responsibilities

• Prepare and present food for banquets in line with hotel premium standards.
• Supervise, coach and train kitchen team members with the Executive Sous Chef and Executive Chef.
• Contribute to menu design, including seasonal menus and daily/weekly specials.
• Maintain quality and freshness of ingredients and meal preparation.
• Implement food hygiene according to legislative standards.
• Handle ordering and stock control.
• Assist the Executive Chef in leading the kitchen team and promoting a positive working culture.

Required profile

• Experienced Chef de Partie with expertise in a similar fast-paced operation.
• Natural leadership skills and the ability to run a busy section calmly under pressure.
• Excellent communication skills and a professional approach.
• Flexibility to work a rotating roster covering mornings, evenings and weekends.
• Australian working rights are required; sponsorship is not available.

Required skills

• Creativity for menu development and up-to-date knowledge of current food trends.
• Ability to order and manage stock.
