Chef de Cuisine - MCG

About the role

Delaware North Australia is hiring a Chef de Cuisine to lead the kitchen at the Melbourne Cricket Ground (MCG), one of Australia's most iconic venues. The role brings a premium dining focus to every service, maintaining high standards of quality and presentation in a high-volume setting.

Key responsibilities

• Oversee the daily operations of the kitchen
• Deliver high-volume, premium dining to exceptional standards of quality and presentation
• Develop innovative menu concepts aligned with current food trends and guest preferences
• Lead, mentor and train the kitchen team
• Set and uphold food standards through efficient systems and processes
• Assist in managing department budgets and food costs, using IT systems to drive efficiency and profitability
• Manage performance and labour costs for permanent and casual kitchen staff
• Support on-site food safety and HACCP accreditation

Required profile

• Proven experience managing high-volume premium dining
• Track record of leading and inspiring diverse culinary teams
• Expertise in menu development, stock management and cost control
• Commercial acumen with a track record of delivering business outcomes
• Relevant culinary qualifications
• Excellent communication and leadership skills
