Executive Chef - The Langham, Melbourne

About the role

The Langham, Melbourne, a luxury hotel on the Southbank Promenade, is seeking an Executive Chef to report directly to the Managing Director and join the hotel leadership team. The role drives culinary excellence across all food and beverage outlets and events, with a focus on enhancing Melba Restaurant and Aria Bar & Lounge. It calls for a hands-on leader who combines creativity, commercial acumen and operational expertise.

Key responsibilities

• Lead and inspire a large, diverse culinary brigade and drive change with the team
• Develop innovative food concepts, menus and seasonal offerings
• Ensure exceptional presentation, consistency, quality and flavour across all outlets
• Collaborate with Food & Beverage, Sales, Events and Commercial teams on dining and event experiences
• Manage labour, food costs, forecasting and productivity to deliver strong business performance
• Champion food safety, hygiene, allergen management and quality assurance
• Build a culture of coaching, development and succession planning

Required profile

• Significant Executive Chef experience in a premium hotel, luxury hospitality or high-volume dining environment
• Proven track record leading multiple outlets, including restaurants, bars, banquets and large-scale events
• Strong leadership, coaching and talent development capabilities
• Deep knowledge of food safety, allergen compliance and operational best practice
