Breakfast Chef de Partie

About the role

Sofitel Melbourne on Collins, a 5-star hotel in Melbourne's CBD, is looking for a motivated Breakfast Chef de Partie for its No35 restaurant. Breakfast is described as more than the first meal of the day, and the role helps set the tone for guests' stay through a well-presented buffet and a welcoming atmosphere.

Key responsibilities

• Lead the breakfast kitchen section so that food is prepared and presented to the highest standards.
• Bring the buffet offering to life with fresh, delicious dishes and an eye for presentation.
• Engage with guests, respond to requests and create a welcoming dining experience.
• Lead, support and motivate the team to deliver a seamless breakfast service.
• Maintain the highest standards of food safety, hygiene and kitchen organisation.
• Work with the wider culinary team to ensure consistency, efficiency and continuous improvement.

Required profile

• Previous experience as a Chef de Partie or in a similar kitchen leadership role.
• Minimum 3-5 years' post-apprenticeship culinary experience in a hotel, resort or high-volume hospitality environment.
• Demonstrated experience in a breakfast buffet operation, managing high guest volumes while keeping quality and presentation high.
• Experience leading a section and supporting the development of junior chefs.
• Full, unrestricted working rights within Australia.
• Availability to work early morning shifts, including weekends and public holidays.

Required skills

• Certificate III in Commercial Cookery (or equivalent recognised culinary qualification).
• Strong working knowledge of HACCP principles, food safety regulations and kitchen hygiene standards.
• Team leadership, strong organisation and attention to detail.
