Assistant Restaurant Manager

About the role

Join The Butler, a contemporary Mexican restaurant in Potts Point, and lead the front‑of‑house team to deliver exceptional guest experiences. You will own the floor, manage service flow and contribute to a vibrant hospitality community.

Key responsibilities

• Lead, inspire and roster FOH teams, ensuring standout guest experiences across every service.
• Own the floor – manage section allocations, reservations, waitlists and seamless service delivery.
• Coach and develop staff in Applejack’s service style, including upselling and guest interaction.
• Monitor labour costs, budgets and P&L metrics to drive performance.
• Ensure responsible service and safety compliance (RSA/RSF, incident reporting, venue protocols).
• Oversee opening and closing procedures, cash‑ups, POS and end‑of‑day processes.

Required profile

• Minimum 2–3 years recent leadership experience in a premium/high‑volume restaurant or bar.
• Current NSW RSA (or ability to obtain before start).
• Availability for rotating roster including nights, weekends and public holidays.

Required skills

• Labour planning and budgeting.
• Stock management.
• POS system operation.
• Strong wine, spirits and food knowledge.
