Chef de Partie – Banquets

About the role

Join the culinary team at Pullman & Mercure Melbourne Albert Park as a full‑time Chef de Partie, specialising in banquet service. You will create high‑quality dishes that delight guests and support a dynamic, fast‑paced kitchen environment.

Key responsibilities

• Prepare and present banquet food to premium hotel standards.
• Supervise, coach and train kitchen team members alongside the Executive Sous Chef and Executive Chef.
• Contribute to menu design, including seasonal menus and daily/weekly specials.
• Maintain ingredient quality, freshness and strict food‑hygiene compliance.
• Manage ordering, stock control and assist the Executive Chef in leading the kitchen.

Required profile

• Experienced Chef de Partie with a background in a fast‑paced operation.
• Creative menu development skills and awareness of current food trends.
• Natural leadership, strong communication and the ability to stay composed under pressure.
• Motivated, energetic and eager to grow within the Accor brand.
• Flexible to work rotating shifts, including mornings, evenings and weekends.
