Sous Chef - Premium Resort, Broome

About the role

INAC Hospitality is recruiting an experienced Sous Chef for a highly regarded premium resort in Broome, Western Australia. The role suits a strong restaurant or hotel chef who wants to join a large, professional kitchen operation and take responsibility for kitchen leadership, standards and team development. The package is $90,000 plus superannuation, with relocation assistance available.

Key responsibilities

• Oversee the day-to-day operation of the kitchen with the senior kitchen leadership team, keeping food quality, presentation, service and operations at a high standard
• Lead and supervise Chef de Parties, Commis Chefs, Apprentices and other kitchen team members
• Maintain high standards of food preparation, presentation and service
• Support menu development, recipe costing and seasonal menu changes, creating dishes that use quality local produce where possible
• Manage section responsibilities, task allocation and service preparation
• Train, mentor and develop junior chefs
• Monitor kitchen labour and assist with wage cost control
• Keep strong communication between the kitchen and the wider Food & Beverage operation
• Maintain stock, product and operational controls, and food safety, hygiene, WHS and kitchen cleanliness standards
• Step into a senior leadership capacity when required

Required profile

• A recognised Commercial Cookery trade qualification
• Previous experience in a quality restaurant, hotel or resort environment
• Supervisory experience, ideally at Sous Chef level
• Experience in fine dining or premium restaurant environments
• Strong leadership, communication and organisational skills, and the ability to train and motivate junior chefs
• Solid understanding of food safety, WHS and commercial kitchen procedures
• Experience with menu development and food costing
• Ability to stay organised and composed during busy services
• Full Australian working rights required; sponsorship may be considered depending on experience and visa status
