Sous Chef

About the role

Mary Mae's Bar & Kitchen, a busy, high-volume venue in Brisbane overlooking the Brisbane River, is looking for an experienced and passionate Sous Chef. It operates seven days a week, with a strong restaurant trade alongside functions, events and major cultural and entertainment events. The role works closely with the Head Chef and Venue team to run the kitchen and deliver consistent, high-quality food.

Key responsibilities

• Support the Head Chef with day-to-day kitchen operations and help with menu development, specials and kitchen improvements
• Lead the kitchen team during busy services and keep the kitchen organised, efficient and positive
• Maintain high standards of food quality, presentation and consistency
• Ensure food safety, hygiene and kitchen standards are met at all times
• Assist with ordering, stock control, receiving and kitchen organisation
• Train, develop and support junior kitchen staff
• Work closely with the front of house team and help manage food cost, labour cost and waste control
• Identify ways to improve kitchen efficiency and reduce waste

Required profile

• Experienced Sous Chef, or a strong Junior Sous Chef ready for the next step
• Experience leading a busy kitchen team and running service under pressure
• Hands-on, reliable and calm, with strong organisational and communication skills
• Strong understanding of food safety and kitchen procedures
• Passion for hospitality and great food
